    Red Cinnamon Cucumber Pickles

    List of Ingredients


    • 2 gallons large cucumbers, peeled, seeded, and sliced
    • 2 cups pickling lime
    • 8 1/2 quarts water
    • 1 cup vinegar
    • 1 tablespoon alum
    • 1 bottle red food coloring
    • water to cover
    • 3 cups vinegar
    • 11 cups sugar
    • 1 (12 ounce) package red hots
    • 10 cinnamon sticks
    • cinnamon oil to taste


    Instructions


    1. Day 1: Combine the lime, 8 1/2 quarts water and cucumber slices. Soak for 24 hours.

    2. Day 2: Drain and wash the slices in cold water. Soak in cold water for 3 hours and drain.

    3. Combine 1 cup vinegar, alum, food coloring, cucumber slices, and water to cover. Pour this syrup over cucumber slices and let stand 24 hours. You can add a few drops of cinnamon oil for more cinnamon taste.

    4. Day 3: Drain syrup into pan and reheat. Pour back over cucumbers.

    5. Day 4: Repeat day 3.

    6. Day 5: Drain and reheat syrup. Spoon cucumbers into hot sterilized jars. Adjust lids and process in boiling water bath for 5 minutes.

    7. Yield: 9 pints
