    Avocado-Shrimp Salsa

    List of Ingredients


    • 1/2 pound medium shrimp (about 20), peeled and cooked
    • 2 small avocados, peeled and coarsely chopped about (1 1/4 cups)
    • 2 plum tomatoes, seeded and chopped (about 1 cup)
    • 2 tablespoons minced red onion
    • 1 tablespoon fresh lime juice
    • coarse salt to taste
    • 32 baked tortilla chips


    Instructions


    1. Place all ingredients in a medium bowl. Toss gently to mix; let stand 5 to 10 minutes. Serve at room temperature.

    2. Yield: 3 cups (12 servings) Serving size: 1/4 cup salsa and 4 baked chips. 86 cal, 6.5g pro, 9.7g carb, 1.6g fiber, 100mg sod, 3g fat, 46mg chol.

    3. Diabetic-1/2 medium-fat meat, 1/2 starch, and 1/2 vegetbale.
