2 pounds red snapper or other firm white fish fillets
1 cup cilantro-lime sauce (recipe follows)
1 sweet white Bermuda onion, thinly sliced, for garnish
Fresh cilantro sprigs, for garnish
1 lemon and 1 lime, sliced lengthwise, for garnish
Cilantro-Lime Sauce:
1/4 pound butter or margarine
1 cup chopped onion
3 Tablespoons fresh lime juice
1/4 cup Worcestershire sauce
Dash of Tabasco
3 Tablespoons chopped fresh cilantro
Salt to taste
Instructions
For Fish: Melt the butter in a skillet and add garlic and fish. Saute until fish flakes when tested with a fork. Do not overcook. Place fish on a warmed serving platter. Pour sauce over fish or serve on the side. Garnish dish with onion, cilantro sprigs and citrus slices.
For Sauce: Melt butter and add the onion, lime juice, Worcestershire, Tabasco, cilantro and salt. Simmer for a few minutes over medium-low heat. Remove to a food processor and blend until smooth. Serve warm.
