Grilled Pork Chops with Sweet Peach Sauce

- 3 tablespoons ground coriander
- 3 tablespoons paprika
- 3 tablespoons cracked black pepper
- 2 tablespoons kosher salt
- 2 tablespoons ground cumin
- 1 tablespoon brown sugar
- 4 (6 ounce) bone-in center cut pork chops (about 1/4-inch thick)
- cooking spray
- 1 cup Sweet Peach Sauce
- Sweet Peach Sauce:
- 1 tablespoon olive oil
- 2 cups sliced red onion
- 3 cups chopped peeled peaches
- 2 cups chopped tomato
- 2 tablespoons minced peeled fresh ginger
- 1/2 cup cider vinegar
- 1/2 cup fresh orange juice (about 1 orange)
- 1/3 cup packed brown sugar
- 1 teaspoon ground allspice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Prepare grill.
- Combine the first 6 ingredients in a bowl. Rub the pork chops with 1/4 cup spice mixture, and reserve the remaining spice mixture for another use. Place the pork chops on grill rack coated with cooking spray. Cook the pork chops 4 minutes on each side or until done. Serve with Sweet Peach Sauce.
- Yield: 4 servings (serving size: 1 chop and 1/4 cup sauce). 266 cal, 10.3 g fat, 26.5g pro, 17g carb, 72mg chol, 1083mg sod.
- For Sauce: Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, and saute for 10 minutes, stirring frequently. Add peaches, tomato, and ginger, and cook for 2 minutes. Add the vinegar and remaining ingredients, and bring to a boil. Reduce heat, and simmer for 20 minutes. Place the peach mixture in a food processor, and process until smooth.
- Yield: 3 cups (serving size: 1 tablespoon). 16 cal, 0.3g fat, 0.2g pro, 3.4g carb, 0mg chol, 11mg sod.
