    Grilled Pork Tenderloin with Apple-Ginger Sauce

    List of Ingredients


    • 3/4 cup apple jelly
    • 2 tablespoons minced peeled fresh ginger
    • 2 tablespoons cider vinegar
    • 1/2 teaspoon salt
    • 1/2 to 1 teaspoon crushed red pepper
    • 1/2 teaspoon black pepper
    • 2 cloves garlic , peeled
    • 1 (1 pound) pork tenderloin, trimmed
    • cooking spray


    Instructions


    1. Preheat grill.

    2. Place first 7 ingredients in blender or food processor; process until smooth.

    3. Insert a meat thermometer into the thickest portion of the pork. Place pork on grill rack cooked with cooking spray; grill 16 minutes or until thermometer registers 160 degrees (slightly pink), turning pork occasionally. Place pork on a platter, and let stand 5 minutes. Serve pork with sauce.

    4. Yield: 4 servings (serving size: 4 ounces pork and 1/4 cup sauce) 290 cal, 3.4g fat, 24.2g pro, 41.5g carb, 74mg chol, 370mg sod.



    Final Comments


    suggestion: Make a double batch of the sauce and marinate the tenderloin in half for several hours before grilling.
