Ham, Rice and Bean Salad

List of Ingredients
- 6 tablespoons red wine vinegar
- 6 tablespoons olive oil
- 4 1/2 tablespoons fresh lime juice
- 1/2 teaspoon hot pepper sauce (such as Tabasco)
- salt and pepper
- 1 1/2 cups water
- 1 cup long-grain brown rice
- 1 cup cooked ham
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped seeded tomato
- 1/4 cup chopped fresh parsley
Instructions
- Whisk first 4 ingredients to blend in small bowl. Season dressing to taste with salt and pepper. (Can be made 1 day ahead. Cover and let stand at room temperature. Whisk before using.)
- Combine water, rice and ham in heavy medium saucepan. Bring to boil; stir. Cover, reduce heat to medium-low and simmer until rice is tender and water absorbed, 30 minutes. Cool slightly.
- Combine rice mixture and all remaining ingredients in large bowl. Toss with enough dressing to coat.
