Chile-Garlic Vinaigrette

- 1 tablespoon chopped serrano chile
- 3/4 teaspoon salt
- 6 cloves garlic, crushed
- 3 tablespoons red wine vinegar
- 2 tablespoons water
- 2 tablespoons fresh lemon juice
- 1 1/2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons anchovy paste
Instructions
- Combine first 3 ingredients in a mortar; mash to a paste with a pestle. Combine garlic paste mixture, vinegar and remaining ingredients in a small bowl, stirring with a whisk.
- Yield: 3/4 cup (serving size: 1 tablespoon). 21 cal, 1.7g fat, 0.3g pro, 1.1g carb, 0.1g fiber, 1mg chol, 0.7mg iron, 266mg sod, 8mg calc.
