Jicama Slaw

List of Ingredients
- 1/4 cup apple cider
- 1 1/2 tablespoons olive oil
- 1 tablespoon cider vinegar
- 2 teaspoons Dijon mustard
- 1 clove garlic, finely chopped
- 2 cups grated jicama
- 1 cup grated carrots
- 1 cup grated Granny Smith apple
- salt and pepper to taste
Instructions
- Whisk the first five ingredients together in a salad bowl. Add jicama, carrot and apple and toss to coat. Season with salt and pepper. Serves 4.
