Lean Fettuccini
List of Ingredients
- 8 ounces fettuccini
- 1 teaspoon olive oil
- 3/4 cup evaporated skim milk
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon grated lemon peel
- 1/2 teaspoon chopped garlic
- white pepper
Instructions
- Cook pasta according to package directions. Drain, immediately return to pot.
- Add oil, toss to coat. Add evaporated milk, cheese, onion, basil, lemon peel, garlic and pepper to taste.
- Cook over medium-high heat until bubbly, stirring constantly. Top with additional Parmesan, basil or lemon slices, if desired.
