Light Cheese and Chili Bake
List of Ingredients
- 1 pound extra-lean ground turkey
- 1 cup chopped onion
- 2 medium cloves garlic, chopped
- 1 (15.5 ounce) can kidney beans, drained
- 1 (10 ounce) can enchilada sauce
- 1 (8 ounce) can tomato sauce
- 1 (4 ounce) can diced green chilies
- 1 cup shredded reduced-fat Cheddar cheese
- 1 cup reduced-fat sour cream
- 1 1/2 cups water
- 3 cups crushed baked corn chips
Instructions
- In a nonstick skillet, saute turkey, onion and garlic until turkey is no longer pink. Drain well and transfer to a crock pot.
- Add remaining ingredients and mix well. Cover and cook on low for 6-8 hours.
- Serve with additional toppings, such as cheese, sour cream, jalapeno, chips, and chopped onions. This is also good served with cornbread.
