    Mashed Potato Casserole

    List of Ingredients


    • 2 pounds baking potato, peeled and cut into 1-inch pieces
    • 1 (8-ounce) tub fat-free cream cheese
    • 1 cup low-fat sour cream
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • cooking spray
    • 1 tablespoon stick margarine or butter, melted
    • 1/2 teaspoon paprika


    Instructions


    1. Preheat oven to 350 degrees.

    2. Place potato in a saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until tender. Drain.

    3. Combine potato, cream cheese, and next 4 ingredients in a bowl; beat at medium speed of a mixer 2 minutes or until smooth. Spoon into an 11 x 7-inch baking dish coated with cooking spray; drizzle margarine over potatoes. Sprinkle with paprika. Bake, uncovered, at 350 for 30 minutes.

    4. Yield: 6 servings (serving size: 1 cup) 223 cal, 7g fat, 10.1g pro, 30.7g carb, 22mg chol, 329mg sod.
