    Mom's Fried Corn


    List of Ingredients


    • 3 cups fresh sweet corn, cut off the cob*
    • 4 tablespoons low-fat margarine
    • 1 tablespoon flour
    • 1/4 cup fat-free half and half or milk
    • salt and lots of pepper


    Instructions


    1. *Be sure to scrape as much "milk" from the cob as you can.

    2. Melt margarine in a skillet and add corn and all it's juices. Saute until all the liquid has evaporated. Sprinkle flour over corn and stir to mix well. Add milk, salt and pepper and cook and stir until thickened and bubbly.

    3. Servings: 4
