    Pineapple Sour Cream Muffins

    List of Ingredients


    • 1/4 to 1/3 cup sugar
    • 1 egg
    • 1/4 cup stick margarine (lite) melted and cooled a little
    • 1 cup fat free sour cream
    • 1 1/2 cups flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup well drained crushed pineapple


    Instructions


    1. Preheat oven to 375.

    2. n a large bowl, beat sugar and egg. Mix in margarine and sour cream. Mix well. In a separate bowl, mix dry ingredients. Fold dry ingredients into sugar mixture. Stir in pineapple.

    3. Bake at 375 for 17 to 20 minutes.

    4. Each muffin as about 127 calories and 2 grams of fat
