Summer Garden Pasta Salad

List of Ingredients
- 8 ounces spaghetti pasta, cooked drained and cooled
- 1 1/2 cups chopped tomato
- 1 cup cucumber, peeled, seeded and chopped
- 1/2 cup fresh peas (or frozen, thawed)
- 1/4 cup chopped red onion
- 1/4 cup chopped red or green bell pepper
- 1/4 cup freshly grated Parmesan cheese
- Dressing:
- 3 tablespoons red wine vinegar
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- pinch cayenne
- salt and freshly ground black pepper, to taste
Instructions
- Combine pasta, vegetables and cheese in a large bowl. Combine dressing ingredients; mix well. Pour dressing over pasta mixture; toss well to coat. Chill until serving time. Toss again before serving.
