Barbecued Chicken Quesadillas

- Cooking spray
- 2 skinned (4 ounces, each), boned chicken breast halves
- 1/4 cup honey barbecue sauce (such as Kraft)
- 1/2 cup chopped tomato
- 1/4 cup chopped onion
- 2 tablespoons minced fresh cilantro
- 2 flour tortillas (8-inch)
- 1/4 cup (1 ounce) shredded reduced-fat sharp cheddar cheese
- 2 cilantro sprigs (optional)
Instructions
- Preheat oven to 400 degrees.
- Place a medium nonstick skillet coated with cooking spray over medium heat until hot. Add chicken; saute 6 minutes on each side. Remove from skillet; shred. Add barbecue sauce; toss.
- Combine the tomato, onion, and minced cilantro in small bowl. Spoon half of the chicken mixture down the center of each tortilla. Top with tomato mixture, and sprinkle with cheese. Fold over; secure with a wooden pick. Place on a baking sheet. Bake at 400 degrees for 4 minutes or until cheese melts. Garnish quesadillas with cilantro sprigs, if desired. Yield: 2 servings (serving size: 1 quesadilla).
