    Creamy Pineapple Pie


    List of Ingredients


    • 1/4 cup sugar
    • 3 tablespoons cornstarch
    • 1 1/3 cups pineapple juice
    • 1 egg yolk
    • 2 cups fresh pineapple chunks, 1/2" pieces
    • 1( 9") pastry shell, baked
    • 1/4 cup flaked coconut, toasted


    Instructions


    1. In a saucepan, combine sugar and cornstarch. Add juice; bring to a boil, stirring occasionally. Boil for 2 minutes. In a small bowl, beat egg yolk; stir in 1/4 cup of the hot mixture. Return all to pan; cook and stir for 1 minute. Remove pan from heat; stir in pineapple. Pour into crust. Chill for 2 hours or till firm. Store in refrigerator. Sprinkle with coconut just before serving.
    2. Servings: 8



    Final Comments


    Notes: 1 (20 ounce plus 1 (8 ounce) can of canned pineapple tidbits can be substituted for fresh. Drain, reserving juices. Add additional pineapple juice to equal 1-1/3 cups.
