Thai Pork Stir-Fry
List of Ingredients
- 1 tablespoon dark sesame oil
- 1 (3/4 to 1 pound) pork tenderloin, cut into thin strips
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons fresh minced ginger
- 8 ounces snow peas, about 2 1/2 cups
- 1 red bell pepper, cut in thin strips
- 1/4 cup soy sauce
- 3 tablespoons jalapeno pepper jelly
- 3 cups hot cooked rice or noodles
- 3 tablespoons sliced green onions
- 3 tablespoons chopped peanuts or cashews
Instructions
- Heat oil in large nonstick skillet over medium-high heat. Add pork, garlic and ginger; stir-fry 1 minute. Add snow peas and bell pepper; stir-fry 3 minutes or until pork is no longer pink. Add soy sauce and jelly; stir-fry 2 minutes or until suace thickens. Seerve over rice or noodles; sprinkle with green onions and nuts.
