    Apple Slaw

    List of Ingredients


    • Vinaigrette:
    • 1/3 cup packed brown sugar
    • 1/3 cup cider vinegar
    • 1 1/2 tablespoons vegetable oil
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • Slaw:
    • 2 1/2 cups chopped Pink Lady or other sweet apple
    • 1 (12 ounce) package broccoli slaw
    • 1 (3 ounce) package dried tart cherries
    • 2 tablespoons unsalted sunflower seed kernels


    Instructions


    1. To prepare vinaigrette, combine first 5 ingredients in a small bowl, stirring well with a whisk.

    2. To prepare slaw, combine apple, broccoli slaw, and dried cherries. Drizzle with vineagreet; toss well to combine. Sprinkle with sinflower seeds; chill for up to 3 hours.

    3. Yield: 8 servings (serving size: 1 cup). 125 cal, 4g fat, 2.1g pro, 24.9g carb, 2.7g fiber, 0mg chol, 0.9mg iron, 91mg sod, 33mg calc.
