    Ham, Rice and Bean Salad

    List of Ingredients


    • 6 tablespoons red wine vinegar
    • 6 tablespoons olive oil
    • 4 1/2 tablespoons fresh lime juice
    • 1/2 teaspoon hot pepper sauce (such as Tabasco)
    • salt and pepper
    • 1 1/2 cups water
    • 1 cup long-grain brown rice
    • 1 cup cooked ham
    • 1 (15 ounce) can kidney beans, rinsed and drained
    • 1/2 cup chopped green bell pepper
    • 1/2 cup chopped onion
    • 1/2 cup chopped celery
    • 1/2 cup chopped seeded tomato
    • 1/4 cup chopped fresh parsley


    Instructions


    1. Whisk first 4 ingredients to blend in small bowl. Season dressing to taste with salt and pepper. (Can be made 1 day ahead. Cover and let stand at room temperature. Whisk before using.)

    2. Combine water, rice and ham in heavy medium saucepan. Bring to boil; stir. Cover, reduce heat to medium-low and simmer until rice is tender and water absorbed, 30 minutes. Cool slightly.

    3. Combine rice mixture and all remaining ingredients in large bowl. Toss with enough dressing to coat.
