    Jicama Fruit Salad

    List of Ingredients


    • 1 teaspoon grated orange rind
    • 1/4 cup fresh orange juice
    • 2 tablespoons brown sugar
    • 3/4 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • 3 cups julienne-cut peeled jicama
    • 1 red grapefruit, peeled and sectioned
    • 2 oranges, peeled and sliced crosswise
    • 2 kiwi fruit, peeled and sliced


    Instructions


    1. Combine first 5 ingredients in a medium bowl; stir well with a whisk. Add jicama and remaining ingredients; toss gently to coat.

    2. Yield: 5 servings (serving size: 1 cup) 99 cal, 0.3g fat, 1.6g pro, 24.5g carb, 0mg chol, 6mg sod.
