    List of Ingredients


    • 1/3 cup peanut oil
    • 2 tablespoon rice wine vinegar
    • 2 tablespoons pineapple juice
    • 2 tablespoons egg substitute
    • 2 teaspoons ground ginger
    • 1/4 teaspoons salt
    • 1 large head romaine lettuce, torn
    • 1 (3-1/2 ounce) jar macadamia nuts, chopped and toasted
    • Hawaiian Bread Croutons
    • 1/2 tablespoon butter or margarine, softened
    • 2 (3/4" thick) slices Hawaiian Bread
    • 1 teaspoon ground ginger, divided
    • 1 cup banana chips, optional


    Instructions


    1. Combine first 6 ingredients, and mix well with wire whisk. Cover and chill at least 1 hour.
    2. Combine lettuce and nuts in a large bowl; add dressing, tossing gently. Sprinkle with croutons and banana chips, if desired.

    3. Hawaiian Bread Croutons: Spread butter on both sides of bread slices, and sprinkle evenly with 1 teaspoon ginger. Cut into 3/4" cubes, and place in a 15x10x1" baking pan. Bake at 350 degrees for 15-20 minutes or till browned and crisp, stirring every 5 minutes.
