Maui Caesar Salad

List of Ingredients
- 1/3 cup peanut oil
- 2 tablespoon rice wine vinegar
- 2 tablespoons pineapple juice
- 2 tablespoons egg substitute
- 2 teaspoons ground ginger
- 1/4 teaspoons salt
- 1 large head romaine lettuce, torn
- 1 (3-1/2 ounce) jar macadamia nuts, chopped and toasted
- Hawaiian Bread Croutons
- 1/2 tablespoon butter or margarine, softened
- 2 (3/4" thick) slices Hawaiian Bread
- 1 teaspoon ground ginger, divided
- 1 cup banana chips, optional
Instructions
- Combine first 6 ingredients, and mix well with wire whisk. Cover and chill at least 1 hour.
- Combine lettuce and nuts in a large bowl; add dressing, tossing gently. Sprinkle with croutons and banana chips, if desired.
- Hawaiian Bread Croutons: Spread butter on both sides of bread slices, and sprinkle evenly with 1 teaspoon ginger. Cut into 3/4" cubes, and place in a 15x10x1" baking pan. Bake at 350 degrees for 15-20 minutes or till browned and crisp, stirring every 5 minutes.
