    Mixed Apple Salad over Greens

    List of Ingredients


    • Dressing:
    • 1/4 cup fresh lemon juice
    • 2 tablespoons honey
    • 1 teaspoon olive oil
    • dash salt
    • dash freshly ground black pepper
    • Salad:
    • 2 cups chopped Granny Smith Apple
    • 2 cups chopped Cameo or Braeburn apple
    • 1/4 cup (1 ounce) crumbled blue cheese
    • 2 bacon slices, cooked and crumbled
    • 4 cups mixed salad greens


    Instructions


    1. To prepare dressing, combine first 5 ingredients in a small bowl, stirring well with a whisk.

    2. To prepare salad, combine apples, cheese and bacon. Drizzle dressing over apple mixture; toss gently to coat. Serve over greens.

    3. Yield: 4 servings (serving size: about 1 cup apple mixture and 1 cup greens). 163 cal, 5.3g fat, 3.7g pro, 28.7g carb, 4.3g fiber, 8mg chol, 1.1mg iron, 201mg sod, 78mg calc.
