    Pineapple Slaw

    List of Ingredients


    • 1 (8 ounce) carton vanilla low-fat yogurt or pineapple low-fat yogurt
    • 3 tablespoons light mayonnaise
    • 1/2 teaspoon lemon juice
    • 5 cups thinly sliced green cabbage or angel hair slaw
    • 1 (8 ounce) can pineapple tidbits in juice, drained


    Instructions


    1. Spoon yogurt onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness. Cover with additional paper towels; let stand 5 minutes. Scrape inyo bowl using a rubber spatula. Stir in mayonnaise and lemon juice.

    2. Combine cabbage and pineapple; add to yogurt mixture, tossing gently to coat. Cover and chill.

    3. Yield: 4 servings (serving size: 1 cup) 98 cal, 1.6g fat, 3.9g pro, 18.2g carb, 3 mg chol, 157mg sod.
