    Spinach Salad with Apricot Vinaigrette

    List of Ingredients


    • 1 (10-ounce) package fresh baby spinach
    • 1 pint grape tomatoes, halved
    • 1 small red onion, thinly sliced
    • 1/2 cup chopped dried apricots
    • 1 (4-ounce) package crumbled goat cheese
    • 1 ripe avocado, peeled and diced
    • 1/2 cup chopped pecans, toasted
    • Apricot Vinaigrette:
    • 1/3 cup vegetable oil
    • 2 tablespoons white wine vinegar
    • 2 tablespoons orange juice
    • 2 tablespoons apricot jam
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon freshly ground pepper


    Instructions


    1. Place first 7 ingredients in a large bowl, tossing gently. Drizzle with Apricot Vinaigrette, tossing gently to coat.
    2. Whisk together all vinaigrette ingredients in a small bowl.
    3. Makes 6 servings
