    Fish Tacos

    List of Ingredients


    • Dressing:
    • 1 1/2 tablespoons reduced-fat sour cream
    • 1 tablespoon minced fresh cilantro
    • 1 1/2 teaspoons fresh lime juice
    • 1/2 teaspoon red wine vinegar
    • Tacos:
    • 4 (6-inch) corn tortillas
    • 2 Margarita Grouper Fillets (see recipe)
    • 1/2 cup vertically sliced red onions
    • 1 lime, quartered


    Instructions


    1. To prepare drressing, combine first 4 ingredients, stirring well with a whisk.

    2. To prepare tacos, place tortillas in a zip-top plastic bag; macrowave tirtillas at high 40 seconds. Divide Margarita Grouper Fillets and onion evenly over half of each tortilla; drizzle each with about 2 teaspoons dressing. Fold tortillas in half. Serve with lime wedges.

    3. Yield: 2 servings (serving size: 2 tacos and 2 lime wedges). 342 cal, 6.3g fat, 37.2g pro, 34.2g carb, 4.4g fiber, 69mg chol, 2.6mg iron, 418mg sod, 177mg calc.
