Italian Beef Sandwiches

List of Ingredients
- 1 large onion, quartered
- 1/4 cup vinegar
- 3 cloves garlic, minced
- 1 (15 ounce) jar roasted bell pepper, undrained
- pinch of salt
- 1 (10-1/2 ounce) can beef broth
- 2 soup cans water
- 3 to 4 poundrump roast
Instructions
- Preheat oven to 350 degrees. Mix all ingredients, except roast in a deep roasting pan or Dutch oven. Set roast into the sauce, cover and bake 3 hours.
- Remove roast from the pan to cool, leaving juices in pan. Refrigerate several hours or overnight.
- Slice the cooled beef thinly, skim fat from juices and return to roasting pan. Return meat to pan with juices and bring to a boil. Reduce heat and simmer 15 minutes.
- Serve on warmed French rolls with strained sauce in individual bowls for dipping. Makes 6 servings.
