    Italian Beef Sandwiches

    List of Ingredients


    • 1 large onion, quartered
    • 1/4 cup vinegar
    • 3 cloves garlic, minced
    • 1 (15 ounce) jar roasted bell pepper, undrained
    • pinch of salt
    • 1 (10-1/2 ounce) can beef broth
    • 2 soup cans water
    • 3 to 4 poundrump roast


    Instructions


    1. Preheat oven to 350 degrees. Mix all ingredients, except roast in a deep roasting pan or Dutch oven. Set roast into the sauce, cover and bake 3 hours.

    2. Remove roast from the pan to cool, leaving juices in pan. Refrigerate several hours or overnight.

    3. Slice the cooled beef thinly, skim fat from juices and return to roasting pan. Return meat to pan with juices and bring to a boil. Reduce heat and simmer 15 minutes.

    4. Serve on warmed French rolls with strained sauce in individual bowls for dipping. Makes 6 servings.
