Classic Cheese Sauce

- 2 tablespoons butter or margarine
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon dry mustard
- 1/4 teaspoon freshly grated nutmeg
- Dash pepper
- 1 1/2 cups milk
- 1 cup shredded Cheddar cheese
- 1/2 cup process cheese food (Cheez-Whiz)
Instructions
- In heavy 1-quart saucepan over medium heat, melt butter. Whisk in flour, salt, mustard, nutmeg and pepper until smooth.
- Gradually whisk in milk and cook until mixture almost boils, stirring constantly. Cook 2 minutes more. Add cheese and stir until it melts, taking care to watch mixture carefully as it scorches easily.
- Makes 2 cups.
