Tamale Soup
List of Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (7 ounce) can chopped green chilies
- 1 (14.25 ounce) can Mexican stewed tomatoes, undrained
- 2 (16 ounce) cans pinto beans, undrained
- 1 (15 ounce) can creamed corn
- 1 teaspoon cumin
- 1/2 teaspoon Mexican oregano
- 2 (10 3/4 ounce) can condensed beef broth, undiluted
- 1 dozen tamales, cut into 1-inch pieces
Instructions
- Cook ground beef, onion, and garlic in a Dutch oven until ground beef isbrowned, stirring until meat crumbles. Add stewed tomatoes and remaining ingredients, except tamales, and simmer for 1 hour.
- Stir in tamale pieces, and serve immediately. Yield: 12 cups.
Final Comments
Serve with chopped green onion, chopped jalapeno, shredded cheese and sour cream for garnish.
