Peas and Quinoa Hoppin' John

- 1 tablespoon olive oil
- 2 3/4 cups chopped onion
- 4 slices bacon, cut into 1/4-inch pieces
- 3 cups fresh pink-eyed peas
- 2 cups water
- 1 cup dry white wine
- 2 cloves garlic, minced
- 1 bay leaf
- 1 1/4 cups frat-free, less sodium chicken broth
- 1 cup uncooked quinoa, rinsed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons thinly sliced green onions
- 1 tablespoon chopped fresh parsley
Instructions
- Heat oil in a Dutch oven over medium-high heat. Add onion; saute 2 minutes. Add bacon; saute 5 minutes. Add peas and next 4 ingredients (peas through bay leaf); bring to a boil. Reduce heat; simmer, partially covered, 30 minutes or until tender. Discard bay leaf.
- Combine broth, quinoa, salt and black pepper in a saucepan; bring to a boil over medium-high heat, and simmer 30 minutes or until done. Add quinoa mixture to pea mixture, and stir. Sprinkle with green onions and chopped parsley.
