Chili Taco Soup
List of Ingredients
- 1 1/2 pounds lean ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 (14.5 ounce) cans diced tomatoes, undrained
- 1 (16 ounce) can hominy, undrained
- 1 (16 ounce) can pinto beans, undrained
- 1 (4 ounce) can chopped green chilies
- 1 envelope taco seasoning mix
- 1 envelope ranch-style dressing mix
- 1 1/2 cups water, or more as needed
- 1 tablespoon chipotle chile canned in adobo, minced-optional
- salt and pepper to taste
Instructions
- Brown ground beef with onion and garlic in large Dutch oven or soup pot. Drain fat. Return to pot and add the remaining ingredients.
- Bring to a boil, reduce heat and simmer about 30 minutes. Can also be done in slow cooker.
- Serve with corn muffins, corn chips or tortilla chips (good for dipping).
