    Creamed Corn and Cilantro

    Adapted from "Cooking with Colorado's Greatest Chefs,"
    Chef and staff at World Wide Recipes


    List of Ingredients


    • 1 teaspoons butter
    • 1 small shallot, finely chopped
    • 1/2 jalapeno pepper (or to taste), finely chopped
    • 1 poblano pepper, peeled and diced, or 1 teaspoon commercially prepared chili powder
    • 1 clove garlic, finely chopped
    • 1/2 cup white wine or water
    • 2 cups heavy cream
    • 4 cups corn
    • 1/2 cup chopped fresh cilantro


    Instructions


    1. Combine the butter, shallots, jalapeno, poblano or chili powder, and garlic in a medium saucepan and cook over moderate heat until the shallots are soft but not browned. Add the wine and continue cooking until reduced by half. Add the remaining ingredients and cook for about 5 minutes, stirring frequently, until thickened. Serves 6 to 8.
