    Cumin-Spiced Black Beans

    List of Ingredients


    • 1 teaspoon olive oil
    • 1 onion, chopped
    • 1 sweet red pepper, chopped
    • 2 cloves garlic, minced
    • 1 can (15 ounce) black beans, rinsed and drained
    • 1 can (15 ounce) low-sodium corn, drained
    • 1/2 cup reduced-fat chicken broth
    • 2 Tablespoon fresh lemon juice
    • 1 teaspoon ground cumin
    • Cilantro sprigs (garnish)


    Instructions


    1. n a nonstick skillet, heat oil, then add onions, peppers and garlic. Cook, stirring often, until tender, about 5 minutes.

    2. Add beans, corn, broth, juice and cumin. Cook, stirring often, until liquid is reduced by half, 8 to 10 minutes. Garnish withcilantro.

    3. Makes 4 servings.
