Ham Steak with Corn Salsa

- Corn Salsa:
- 1 teaspoon olive oil
- 4 ears fresh corn, kernels cut off the cob
- 1/4 teaspoon salt
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped tomato
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 2 teaspoons finely chopped jalapeno chile
- Ham:
- 2 teaspoons olive oil
- 1/2 teaspoon cumin
- 1 bone-in (1 lb.) reduced-sodium ham steak
- Fresh cilantro sprigs, for garnish
Instructions
- Make Corn Salsa: Heat a large nonstick skillet over high heat 2 minutes. Add oil and corn. Cook corn stirring, just until it begins to brown. Stir in salt.Transfer to medium bowl; stir in remaining ingredients.
- Combine oil and cumin in cup; rub over both sides of ham steak. Heat same skillet over medium-high heat 2 minutes. Cook steak until browned, about 3 minutes per side. Cut into serving pieces. Serve with salsa and garnish with cilantro sprigs, if desired. Makes 4 servings.
