    Margarita Caesar Salad

    List of Ingredients


    • Lime wedges, optional
    • Kosher salt, optional
    • 1 large head romaine lettuce, torn
    • 1 cup shredded Monterey jack cheese
    • 1/4 cup finely chopped fresh cilantro
    • 1 sweet red pepper, cut in thin strips
    • Margarita Dressing
    • 1/3 cup canola or safflower oil
    • 1/4 cup lime juice
    • 2 tablespoons egg substitute
    • 1 1/2 tablespoons tequila
    • 1 1/2 teaspoons Triple Sec
    • 1 clove garlic, minced
    • 1 serrano pepper, seeded and chopped
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground cumin
    • Tortilla Triangles
    • 6 (6" ) corn tortillas, cut in small wedges
    • 1/2 cup canola or safflower oil
    • Kosher salt


    Instructions


    1. For salad: Rub rims of 6 chilled salad plates with lime wedges, if desired; place salt in a saucer, and roll rim of each plate in salt, set aside.

    2. Combine lettuce and next 3 ingredients in a large bowl; add Margarita Dresing, tossing gently.

    3. Arrange salad on plares, and sprinkle with tortilla triangles. Garnish with lime wedges, if desired.

    4. For dressing: Combine all ingredients; mix well with wire whisk. Cover and chill. Yield: 1 cup

    5. For tortilla triangles: Fry tortilla triangles in hot oil in small skillet until golden brown; drain on paper towels, and immediately sprinkle with kosher salt.

    6. Serves 6
