Margarita Caesar Salad

- Lime wedges, optional
- Kosher salt, optional
- 1 large head romaine lettuce, torn
- 1 cup shredded Monterey jack cheese
- 1/4 cup finely chopped fresh cilantro
- 1 sweet red pepper, cut in thin strips
- Margarita Dressing
- 1/3 cup canola or safflower oil
- 1/4 cup lime juice
- 2 tablespoons egg substitute
- 1 1/2 tablespoons tequila
- 1 1/2 teaspoons Triple Sec
- 1 clove garlic, minced
- 1 serrano pepper, seeded and chopped
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- Tortilla Triangles
- 6 (6" ) corn tortillas, cut in small wedges
- 1/2 cup canola or safflower oil
- Kosher salt
Instructions
- For salad: Rub rims of 6 chilled salad plates with lime wedges, if desired; place salt in a saucer, and roll rim of each plate in salt, set aside.
- Combine lettuce and next 3 ingredients in a large bowl; add Margarita Dresing, tossing gently.
- Arrange salad on plares, and sprinkle with tortilla triangles. Garnish with lime wedges, if desired.
- For dressing: Combine all ingredients; mix well with wire whisk. Cover and chill. Yield: 1 cup
- For tortilla triangles: Fry tortilla triangles in hot oil in small skillet until golden brown; drain on paper towels, and immediately sprinkle with kosher salt.
