Mashed Potatoes with Hot Pepper Cheese and Garlic

List of Ingredients
- 10 cloves garlic, unpeeled
- 3 1/2 pounds russet potatoes, peeled and cut in 2-inch pieces
- 2 tablespoons olive oil
- 1/4 cup chopped shallots
- 1/4 cup butter, room temperature
- 1 cup grated hot pepper Monterey Jack cheese
- 3/4 cup sour cream
Instructions
- Preheat oven to 350 degrees F. Wrap garlic in foil. Roast until tender, about 1 hour. Peel. Place in small bowl; mash with a fork.
- Cook potatoes in pot of boiling water until tender, about 25 minutes. Drain.
- Heat oil in same pot over medium heat. Add garlic and shallots; saute 2 minutes. Add potatoes; cook until potatoes begin to fall apart, stirring occasionally, about 6 minutes. Mash potatoes in pot. Mash in butter, then cheese and sour cream. Season with salt and pepper.
