Mexican Lasagna
List of Ingredients
- 1 pound lean ground beef
- 1 (16 ounce) can refried beans
- 2 teaspoons oregano
- 1 teaspoon cumin
- 3/4 teaspoon garlic powder
- 12 uncooked regular lasagna noodles
- 2 1/2 cups water
- 2 1/2 cups salsa
- 4 ounces ahredded Monterey Jack cheese or Mexican blend
Instructions
- Preheat oven to 350 degrees F.
- Combine raw beef, beans, and spices in a mixing bowl.
- Place 4 uncooked noodles in the bottom of a 13 x 9-inch baking pan, breaking noodles if necessary to cover whole bottom of pan.
- Spread 1/2 of the beef mixture over noodles and top with 4 more noodles. Spread remaining meat mixture over these and top with remaining 4 noodles.
- Combine water and salsa and pour over beef and noodles in pan. Cover tightly with foil and bake for 1 1/2 hours.
- Remove from oven and sprinkle with cheese. Bake uncovered until cheese is melted, about 5 to 10 minutes. Let stand at least 15 minutes to firm up. This is a must to insure easy slicing.
