Red Snapper with Cilantro-Lime Sauce

List of Ingredients
- 2 to 3 Tablespoons butter or margarine
- 2 garlic cloves, peeled and chopped
- 2 pounds red snapper or other firm white fish fillets
- 1 cup cilantro-lime sauce (recipe follows)
- 1 sweet white Bermuda onion, thinly sliced, for garnish
- Fresh cilantro sprigs, for garnish
- 1 lemon and 1 lime, sliced lengthwise, for garnish
- Cilantro-Lime Sauce:
- 1/4 pound butter or margarine
- 1 cup chopped onion
- 3 Tablespoons fresh lime juice
- 1/4 cup Worcestershire sauce
- Dash of Tabasco
- 3 Tablespoons chopped fresh cilantro
- Salt to taste
Instructions
- For Fish: Melt the butter in a skillet and add garlic and fish. Saute until fish flakes when tested with a fork. Do not overcook. Place fish on a warmed serving platter. Pour sauce over fish or serve on the side. Garnish dish with onion, cilantro sprigs and citrus slices.
- For Sauce: Melt butter and add the onion, lime juice, Worcestershire, Tabasco, cilantro and salt. Simmer for a few minutes over medium-low heat. Remove to a food processor and blend until smooth. Serve warm.
- Serves 4.
