    Red Snapper with Cilantro-Lime Sauce

    List of Ingredients


    • 2 to 3 Tablespoons butter or margarine
    • 2 garlic cloves, peeled and chopped
    • 2 pounds red snapper or other firm white fish fillets
    • 1 cup cilantro-lime sauce (recipe follows)
    • 1 sweet white Bermuda onion, thinly sliced, for garnish
    • Fresh cilantro sprigs, for garnish
    • 1 lemon and 1 lime, sliced lengthwise, for garnish
    • Cilantro-Lime Sauce:
    • 1/4 pound butter or margarine
    • 1 cup chopped onion
    • 3 Tablespoons fresh lime juice
    • 1/4 cup Worcestershire sauce
    • Dash of Tabasco
    • 3 Tablespoons chopped fresh cilantro
    • Salt to taste


    Instructions


    1. For Fish: Melt the butter in a skillet and add garlic and fish. Saute until fish flakes when tested with a fork. Do not overcook. Place fish on a warmed serving platter. Pour sauce over fish or serve on the side. Garnish dish with onion, cilantro sprigs and citrus slices.

    2. For Sauce: Melt butter and add the onion, lime juice, Worcestershire, Tabasco, cilantro and salt. Simmer for a few minutes over medium-low heat. Remove to a food processor and blend until smooth. Serve warm.

    3. Serves 4.
