    Southwestern Potato Salad

    List of Ingredients


    • 1 cup mayonnaise -- or reduced fat
    • 1/4 cup Dijon mustard
    • 2 tablespoons fresh lime juice
    • 1 medium tomato -- chopped
    • 2 tablespoons cilantro -- chopped
    • 1/2 jalapeno -- finely diced
    • 2 scallions (white and green parts) -- chopped
    • 1/2 medium red onion -- thinly sliced
    • 1/2 teaspoon cayenne
    • 1 small clove garlic -- minced
    • salt and freshly ground pepper
    • 16 new potatoes -- cook/drain/slice


    Instructions


    1. With a spatula, combine mayonnaise and mustard with remaining ingredients, except potatoes, and mix well. Season to taste and pour over warm potatoes.
