Southwestern Potato Salad

List of Ingredients
- 1 cup mayonnaise -- or reduced fat
- 1/4 cup Dijon mustard
- 2 tablespoons fresh lime juice
- 1 medium tomato -- chopped
- 2 tablespoons cilantro -- chopped
- 1/2 jalapeno -- finely diced
- 2 scallions (white and green parts) -- chopped
- 1/2 medium red onion -- thinly sliced
- 1/2 teaspoon cayenne
- 1 small clove garlic -- minced
- salt and freshly ground pepper
- 16 new potatoes -- cook/drain/slice
Instructions
- With a spatula, combine mayonnaise and mustard with remaining ingredients, except potatoes, and mix well. Season to taste and pour over warm potatoes.
