    Texas Taco-Bean Salad


    List of Ingredients


    • 2 large tomatoes, chopped
    • 8 ounces (2 cups) Mexican blend cheese
    • 1 (2 1/4 ounce) can sliced black olives, drained
    • 1 (26 ounce) can Ranch-Style beans, drained
    • 1 (11 ounce) can Mexicorn, drained
    • 1 (4.5 ounce) can chopped green chilies, drained
    • 1 bunch green onions, sliced
    • 1 large avocado, chopped
    • 2 tablespoons chopped fresh cilantro
    • 1 teaspoon ground cumin
    • 1 (8 ounce) bottle Catalina salad dressing
    • 4 cups crushed corn chips
    • 1 bag torn lettuce


    Instructions


    1. Stir together the first 11 ingredients in a large bowl. Refrigerate until ready to serve. Just before serving toss in the crushed chips and serve in lettuce.

    2. Serves 12

    3. For main dish meal add cooked chicken or taco meat.
