    Tijuana Coleslaw

    List of Ingredients


    • 1 medium cabbage, finely shredded
    • 2 tablespoons chopped fresh cilantro
    • 2 carrots, peeled and shredded
    • 2/3 cup mayonnaise
    • 1/3 cup sour cream
    • 2 tablespoons fresh jalapeno, seeded and minced
    • 1 tablespoon chili powder
    • 1 teaspoon salt
    • 1 tablespoon balsamic vinegar
    • 1 small onion, thinly sliced
    • 1 small red pepper, thinly sliced
    • pitted black olives, optional


    Instructions


    1. In a large bowl, combine cabbage, cilantro and carrots. Blend mayonnaise with sour cream until creamy. Add next 6 ingredients to mayonnaise mixture. Fold gently into cabbage. Garnish with olives if desired.

    2. Serves 10
