    Roasted Asparagus with Orange Sauce

    List of Ingredients


    • 1 pound medium asparagus, tough ends peeled
    • 1 tablespoon olive oil
    • Salt and white pepper to taste
    • Orange sauce:
    • 1 cup orange juice
    • 1 tablespoon lemon juice
    • 1 tablespoon balsamic vinegar
    • 1/2 teaspoon rose water
    • Zest of 1 orange


    Instructions


    1. For asparagus: Preheat oven to 450 degrees. Toss asparagus in olive oil; place in low-sided pan in single layer. Sprinkle with salt and pepper. Bake for 10 to 12 minutes, or until a fork pierces stalk easily.

    2. For sauce: Bring orange juice to boil; cook until reduced by half. During last minute of boiling add lemon juice, vinegar and rose water. Pour juice over asparagus. Sprinkle with zest.

    3. Per serving: 85 calories, 3 g protein, 12 g carbohydrates, 4 g fat, 0 mg cholesterol, 3 mg sodium, 2.5 g fiber. Calories from fat: 36 percent.
