Scalloped Chayote Squash con Queso

- 24 ounces Chayote squash -- 3 squash
- 1/3 cup cream
- 2 tablespoons butter
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon Wondra Flour
- 4 ounces cheddar cheese, shredded
Instructions
- Preheat oven to 350.
- Peel squash and slice round like an apple, then cut slice in half. There will be a little core to remove. This looks like green apple slices.
- Place in skillet with a little water and steam with a lid on for 6 minutes. Remove and drain well.
- Layer half the slices, use salt and pepper and sprinkle with 1/2 tablespoon. Wondra flour, dot with butter; sprinkle with half the cheese and repeat layers.
- Bake for 35 minutes. Standing time is needed for it to firm up.
