    Scalloped Chayote Squash con Queso

    List of Ingredients


    • 24 ounces Chayote squash -- 3 squash
    • 1/3 cup cream
    • 2 tablespoons butter
    • 1 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 tablespoon Wondra Flour
    • 4 ounces cheddar cheese, shredded


    Instructions


    1. Preheat oven to 350.

    2. Peel squash and slice round like an apple, then cut slice in half. There will be a little core to remove. This looks like green apple slices.

    3. Place in skillet with a little water and steam with a lid on for 6 minutes. Remove and drain well.

    4. Layer half the slices, use salt and pepper and sprinkle with 1/2 tablespoon. Wondra flour, dot with butter; sprinkle with half the cheese and repeat layers.



    5. Bake for 35 minutes. Standing time is needed for it to firm up.

    6. Serving Size : 6
