Southwestern Hominy

List of Ingredients
- 1 cup chopped onions
- 2 cloves garlic, minced
- 2 cans (12-1/2 ounce each) yellow hominy, drained
- 2 cups chopped tomato
- 1 can (4 ounce) chopped green chilies
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon pepper
- 1/2 cup reduced-fat shredded cheddar cheese
Instructions
- n a large skillet that has been coated with non-stick spray, saute onions and garlic until tender. Add the hominy, tomatoes, chilies, chili powder, cumin and pepper; mix gently.
- Transfer to a 2-qt. baking dish theat has been coated with cooking spray. Bake, uncovered, at 350 degrees for 25 min. Sprinkle with cheese, and bake 5 minutes longer or until cheese is melted.
