    Southwestern Hominy

    Quick Cooking-Jan/Feb/99


    List of Ingredients


    • 1 cup chopped onions
    • 2 cloves garlic, minced
    • 2 cans (12-1/2 ounce each) yellow hominy, drained
    • 2 cups chopped tomato
    • 1 can (4 ounce) chopped green chilies
    • 1 teaspoon chili powder
    • 1/2 teaspoon cumin
    • 1/4 teaspoon pepper
    • 1/2 cup reduced-fat shredded cheddar cheese


    Instructions


    1. n a large skillet that has been coated with non-stick spray, saute onions and garlic until tender. Add the hominy, tomatoes, chilies, chili powder, cumin and pepper; mix gently.
    2. Transfer to a 2-qt. baking dish theat has been coated with cooking spray. Bake, uncovered, at 350 degrees for 25 min. Sprinkle with cheese, and bake 5 minutes longer or until cheese is melted.

    3. 1/2 cup serving= 76 cal., 223mg sod, 1mg chol, 14g carb, 3g pro, 1 g fat
