- 2 pounds red potatoes, cubed
- 1/4 cup fat-free, less-sodium chicken broth
- 1/4 cup reduced-fat sour cream
- 2 tablespoons butter
- 1 tablespoon wasabi paste
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place potato in a large saucepan; cover with water. Bring to a boil; cook 15 minutes or until tender. Drain. Combine potato and remaining ingredients in a bowl. Mash to desired consistency.
