- 1 onion, peeled and chopped
- 2 fresh jalapeno chilies, rinsed, stemmed,seded and chopped
- 1 tablespoon minced fresh ginger
- 1 tablespoon oil
- 1/2 cup fresh cilantro,divided
- 1 tablespoon curry powder
- 1 1/2 teaspoons garam masala
- 1/2 teaspoon sugar
- 1 can (15 ounce) chickpeas, drained
- 2 to 3 firm ripe tomatoes, chopped
- 1 cup plain yogurt
Instructions
- In a 10-12-inch frying pan over medium-high heat, combine the onions,chilies and ginger and oil; stir often until the onion is lightly browned, 6 to 8 minutes.
- Add 1/4 cup of the chopped cilantro, curry powder, garam masala and sugar;stir until fragrant, about 30 seconds. Stir in the chickpeas and all but 1/2 cup of the tomatoes, then add 1/2 cup water. Boil over medium-high heat, stirring often, until the tomatoes have disintergrated and most of the liquid has boiled away, about 8 minutes. Remove from the heat , stir in 1 cup of yogurt, and season to taste with salt. Pour into a serving bowl. Top with remaining cilantro and tomatoes. Top portions to taste with more yogurt.
