    Hearty Vegetable Stew


    List of Ingredients


    • 1 (49 1/2 ounce) can chicken or vegetable broth
    • 1 large onion, chopped
    • 3 cloves garlic, minced
    • 1 tablespoon minced fresh ginger
    • 1 teaspoon paprika
    • 3/4 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 (14 1/2 ounce) can diced tomatoes in juice, undrained
    • 1 (16 ounce) can chickpeas, drained
    • 3 large potatoes, peeled and cut into cubes
    • 3 carrots, cut into pieces
    • 1 medium zucchini, shredded
    • 1 cup frozen peas
    • 1/4 cup chopped parsley
    • 1/4 cup chopped cilantro


    Instructions


    1. Combine all ingredients together in a Dutch oven, except peas, parsley and cilantro. Bring to a boil, reduce heat and simmer until vegetables are tender. Add peas, parsley and cilantro and simmer 5 minutes. Serve over couscous or rice, if deisred.
