Hearty Vegetable Stew
List of Ingredients
- 1 (49 1/2 ounce) can chicken or vegetable broth
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 1 teaspoon paprika
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 (14 1/2 ounce) can diced tomatoes in juice, undrained
- 1 (16 ounce) can chickpeas, drained
- 3 large potatoes, peeled and cut into cubes
- 3 carrots, cut into pieces
- 1 medium zucchini, shredded
- 1 cup frozen peas
- 1/4 cup chopped parsley
- 1/4 cup chopped cilantro
Instructions
- Combine all ingredients together in a Dutch oven, except peas, parsley and cilantro. Bring to a boil, reduce heat and simmer until vegetables are tender. Add peas, parsley and cilantro and simmer 5 minutes. Serve over couscous or rice, if deisred.
