    SIMPLY THE BEST BANANA BREAD

    2 1/2 c. flour
    1 tsp. salt
    1 tsp. baking soda
    1 c. margarine
    2 c. sugar
    2 c. mashed bananas (4 - 6)
    4 eggs, slightly beaten
    1 c. walnuts (optional)
    1/2 c. mini chocolate chips (optional)
    1/2 c. dried cranberries (optional)

    Recipe



    Pre-heat oven to 350°. Grease and flour pan (muffin or loaf pans). Sir and toss
    together
    flour, salt, baking soda and set aside. In a large bowl combine margarine,
    sugar, eggs and
    bananas until well blended. Add the combined dry ingredients until batter is
    thoroughly
    blended. It may be slightly lumpy from the mashed bananas. Pour into prepared
    loaf pan
    or muffin tins.

    Baking Instructions for full recipe (recipe can be halved): 4 mini loaf pans 45
    min., 24 mini
    muffins 15 - 17 min., 18 large muffins 25 min., 2 loaf pans 65 - 70 min. Muffins
    and
    bread will turn dark brown. Check center for doneness with a bamboo skewer.
    Remove
    from oven and let cool for 5 minutes before inverting.
    Note: over-ripe bananas can be frozen in their peels until ready for use. Simply
    defrost
    and squeeze out of the peel when ready to use.
