3 c. shredded hash browns or sliced potatoes
(3-oz.) shredded Monterey Jack cheese with jalapeno peppers (3/4 C)
1 c. diced fully cooked ham
1/4 c. sliced green onions with green tops
4 eggs - beaten
1 1/2 c. 2% or FF milk
1/4 tsp. pepper
Recipe
Preheat oven to 350°. Spray 2 quart baking dish (or pie plate) with nonstick cooking spray.
Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham, and green onion. Combine eggs, milk and pepper. Pour over potato mixture. Bake uncovered for 40 -
45 minutes or until center appears set. Cool for 5 minutes before serving. Serve with melon wedges, fresh berries and banana bread or muffins.
