Crock Pot Shredded Chicken

Makes 4 servings.
Serve each serving with 1/2 c. rice.
6 pts. total for each serving, including rice.
List of Ingredients
Toss all this into a crockpot:
1 can whole kernel corn, drained
1 can black beans, drained
1 can green chilies
1 whole jar Wal-Mart black bean/corn salsa (it's about a quart!)
2 boneless/skinless chicken breasts

I let mine cook while I'm at work - about 8 hours.
Remove chicken, let cool a bit, shred and return to pot.
OR
Same ingredients as previous post:
1 can corn...
1 can black beans...
1 can green chilies...
1 whole jar salsa...
2 chicken breasts...
Cook 6 hours in a crockpot. Remove chicken, shred, return to pot.
On the stove, cook 4 oz. grits with 2 cups of water for about 5 minutes. It should start getting thick. Pour into crockpot.
Cook another 2+ hours. You may need to add salt.
Makes 4 servings, 6 points each.
