1 tsp Asian (dark) sesame oil
2 cups packaged coleslaw mix
4 scallions, sliced
1/8 tsp crushed red pepper
1 cup finely chopped cooked turkey or chicken
2 tblsp chopped unsalted dry-roasted peanuts
2 tsp fresh lime juice
1 tsp reduced-sodium soy sauce
2 tblsp chopped fresh basil
1 (10”) burrito-size fat free flour tortilla, warmed
Recipe
Heat the oil in a large skillet over medium-high heat. Add the coleslaw mix, scallions, and crushed red pepper; cook, stirring frequently, until the cabbage begins to wilt, about 3 minutes.
Stir in the turkey, peanuts, lime juice, and soy sauce. Cook stirring frequently, until heated through, about 3 minutes. Stir in the basil.
Spoon the filling onto the tortilla and roll up, cut the roll in half on a slight diagonal. Serve at once or pack for lunch.
